This mushroom and microgreen journey started 8 years ago when I transitioned to eating a plant-based diet. I swapped out meat for mushrooms and started juicing vegetables. It was almost impossible to find lions mane, oyster mushrooms or fresh microgreens in the local grocery stores here in Colorado. We were already growing a fair amount of vegetables in our garden, so we decided why not grow our own mushrooms and microgreens … and so it began and now the journey continues.
